healthy diet trick: KEBABS!

I had to pop in and share a random recent diet trick that my husband cooked up over the holiday weekend. I wasn’t interested in any of the dinner options we had, so he got creative and grilled up some…
Okay, so why is this a diet trick? There are NO additional sauces, calories, etc. We took shrimp, pineapple, green pepper, and onion and stacked them up on skewers. He then fired up the grill and kept them on there, turning frequently, for less than ten minutes.
The grill marks gave the food a nice char flavor and the pineapple got a little bit sweeter.
If you’re seriously counting calories, this is the way to cook kebabs. You could also substitute a grill for a grill pan.
However, you might want more flavor than that! I think next time we cook them I might brush them with olive oil or coconut oil for a tropical flavor–and some healthy fats!

Two nights later, which was last night, we were short on time and wanted something quick and healthy. What did we do? TOFU KEBABS! My husband cooked them on a pan on the stove which gave the tofu a nice even crisp. Make sure to drain the tofu of water beforehand, it’ll crisp up better.
